Yo, yo! I'm Will, a small-scale artisan bread baker based in St. Thomas.
All of my breads are naturally fermented and I strive to use the highest quality flour and whole grains I can. I add fresh milled whole grain to every loaf for maximum nutrition and flavor.
I try to use local ingredients when possible. If you're a farmer and have interesting ingredients please let me know! I recognize that wheat, the main ingredient used in bread, is not local to the Virgin Islands but I source various grains from state-side farmers focused on regenerative agriculture.
